Kumquat Upside-Down Cake

Like I said earlier, I’m re-trying some old recipes that I love. I made this Kumquat upside down cake again, because it is seriously awesome and we picked a lot of kumquats from my Nana’s tree yesterday. See the original recipe and directions here. This time I made a smaller recipe for an 8.5″ cast iron skillet. It worked perfectly when I did a x0.6 prep of the original recipe (ie 5  eggs x 0.6 = 3 eggs, etc)

Thanks to my Daddy for letting me play with his awesome camera! (Most of my other pics are actually just off my iPhone, so it was fun to use a real camera!) And a big happy birthday to both of my folks!!

Also, if you haven’t made an upside-down cake before, this video might help with the upside-down part! (Make sure the cake and pan are thoroughly cooled before handling!)
