Cinnamon Raisin Bread

Kim and David were in the area for a wedding this weekend, so I got a mani/pedi with Kimbo and Suki. 🙂 Good start to the weekend!

Sunday morning, I decided to send Kim and David back to LA with a loaf of Cinnamon Raisin Bread. (It was also their wedding anniversary this week, so homemade bread for a present? Sure!)

Directions: In your bread machine, use the dough cycle to bring together the dough. (Or you can knead in a standing mixer and let rise 2x.) Add the raisins at the end of the first kneading cycle. If you’ve never made bread before, or don’t have a bread machine, I’d be glad to share some tips, because bread can be finicky!

Preheat the oven to 375°F and prep your bread pan with a non-stick spray. After the dough cycle is complete, remove the dough from the bread machine, and gently transfer it to the bread pan. Cover the bread with a clean towel and let it rise for 30-40 minutes, or until it is just starting to lift the towel. Bake for 45-50 minutes. Remove from the bread pan and let it cool on a wire rack, covered by the towel.

I didn’t get to try the bread, but accounts from K&D mentioned that they were eating chunks off the loaf on the way to the airport like it was a burrito…I’d say that’s a good sign.
